Last week I went to The Walton with my friend Emily and she recommended I try the ricotta toast. I was in heaven, to say the least. I’d never tried ricotta toast until that day, and now it’s going to be one of my go-to breakfasts! This weekend I made some of my own with a little twist and decided to create 2 breakfast toast ideas that are super simple and delicious.
I usually have more of a savoury tooth when it comes to breakfast foods, but from time to time I also crave something sweet in the mornings. So I decided to create one sweet breakfast toast and one savoury breakfast toast you can make depending on what you’re in the mood for.
If you’re looking for new breakfast toast ideas, here are two you can make whether you need a quick breakfast before you head out the door or are having a lazy morning reading and drinking tea!
1) Ricotta Toast with Berries and Pistachios
The ricotta toast I had at The Walton had roasted beets on top, and it was incredibly delicious. I wanted to switch it up a little (mostly because I’ve tried to make beets before and they’re NOT my strong suit…they also take a while to make and I wanted something speedy to share with you guys!) so I made this one with strawberries, blueberries and pistachios! Definitely a great option if you’re craving something sweet for breakfast.
Whole grain bread
Ricotta cheese (1.5 to 2 big scoops per piece of toast)
Honey (1-2 tablespoons depending on how sweet you want it)
Strawberries (Handful, sliced)
Pistachios, Crushed (2 -3 per slice)
Mix ricotta and honey together in a small mixing bowl while bread is toasting. Spread ricotta and honey blend over toast. Top with berries and pistachios. Enjoy!
2) Avocado Toast with Hummus Tomatoes and Red Onion
I’ve been on a total avocado toast kick these days and I’ve found a combination I absolutely love! If you haven’t tried hummus on your avocado toast yet, you’re missing out big time! It gives it a whole new flavour and also ensures your toast isn’t too try, which can happen with avocado toast. I also love the addition of tomatoes and red onion to give it more flavour.
Whole grain bread
Hummus (2 big scoops per piece of toast)
Avocado (Half per piece of toast)
2-3 Cherry tomatoes per slice
Red onion, chopped (To taste)
Pinch of sea salt
Spread hummus over toasted slice of bread. Blend avocado, tomatoes and red onion (like guacamole). Spread avocado mix over toast and finish with a punch of salt.
What I love so much about these breakfast toast ideas is that you can personalize them to your taste. Love pistachios? Packed them on! Don’t want the ricotta to be too sweet? Use less honey. Make each breakfast toast your own so they’re fun for you to make and enjoy in the morning!
